       What's for dinner?



   As I start to get into the daily routine of blogging, I want to start posting some regular weekly posts. And something that interests me is cooking.  So....I'll start posting meals and recipes, and ideas for what to make for dinner.

   Lately we've had some great deals on peppers, and broccoli, and I just got 40lbs of chicken,  so tonight for dinner at my house is Chicken Stir Fry! I have also enjoyed canning fixing my own veggies, fruits, and jellies, so for desert tonight we are trying something brand new,Peach Walnut ShortCake!

   When I cook, I have trouble following recipes, and tend to add things and omit things, and just go by taste.  Here is what I plan to include in my stir fry: chicken of course, broccoli, green & red peppers, onions, green beans frozen from my garden, mushrooms, and brown rice!  This meal is one of my families favorites, and I love to fix it. It's wholesome, g-free, and healthy!  Perfect for those of us that enjoy cooking with healthy alternatives.

    For the desert, I'm using a jar of peaches I processed myself, and a jar of Maple-Walnut Syrup I processed as well. This may not be quite as healthy, but I have been eying this recipe for months!

 Chicken & Veggie Stir Fry
2 tbs olive oil
3 chicken breasts, cut and cubed
1 tbs garlic, minced
veggies of choice: I used bell peppers, onion, squash, green bean, broccoli, mushrooms
brown rice - cook according to package

Heat EVOO in skillet or wok, cook chicken thoroughly.  Remove chicken after cooked, then add veggies, except broccoli if using.  Steam broccoli for a couple minutes before adding to veggies.  After veggies are cooked add garlic and cook a 1-2 more min.  Add chicken back to veggies until thoroughly mixed and done.

Peach-Walnut Shortcake (i got this recipe from my Ball Canning Book)
1 quart of peaches
1 8 oz jar of Walnut-maple syrup
Bisquick shortcakes as prepared on back of the box
