What's for dinner Thursday?

This week has been full of illness and activities. I almost forgot how to cook! No, not really, but I've missed "cooking" a meal.  I browsed all my favorite recipe sites, even a few blogs in search for something appetizing for dinner. If your family is anything like mine, there are only about 20 or so variety of meals that will please everyone's picky taste buds.  But we all like pasta, cheese, some variety of pasta sauce and kielbasa. So I managed to get creative with dinner and throw a variety of things in for a scrumpt-u-licious dish everyone raved over :-).  This meal was super easy, super cheap, and I made it with items I have stocked up on lately on sale.  Kielbasa Sausage was $1.50, Penne pasta free, Vodka pasta sauce $.15, package of 4-cheese Italian blend $.79 (and the cheese I can use more than once), Ciabata Cheesy Toast $.99, the tomatoes and spinach were included in my Bountiful Basket from last Saturday.

Baked Four Cheese Kielbasa Penne in Vodka Sauce (and yes, I made that up!)
1 pkg beef kielbasa cut up
3/4 box penne pasta
1 jar any favorite pasta sauce (I used Vodka sauce for an added twist of flavor!)
roughly 6-9 oz chopped spinach
1-2 diced tomatoes
1 1/2 cup Italian 4 cheese blend, or your favorite Italian cheeses
1 tblsp minced garlic
1 tblsp olive oil

Preheat oven to 375. Cook pasta as directed, and about a minute away from being done, add chopped spinach.  In a large skillet add olive oil and garlic, when hot add kielbasa, pasta sauce, tomatoes simmer 3 minutes.  Drain pasta, return to pan, and add sausage and sauce mixture.  Stir in 1/2 cup cheese, then spoon into baking dish.  Cook for 20 minutes, then top with remaining cheese and cook 3 minutes more or until cheese is melted.
